Baked Oatmeal Serves: 3 Time: 40 mins Work Time: 5mins Ingredients: * Banana, 1 medium[1] * Rolled oats, 1 & 1/2 cups * Oat milk, 1 cup * Baking powder, 1 tsp * Blueberries, 1/2 cup[2] * Maple syrup, 1 tsp[3] * Vanilla, 1/2 tsp Steps: 1. Preheat oven to 350. 2. In a mixing bowl, mash the banana up with a fork. 3. Mix all the other ingredients in. 4. Let the mixture sit for a few minutes. 5. Spread the mixture out in a loaf pan - it should be like half full. 6. Bake for 30 min. It won't necessarily pass the knife test, so look for crisping at the corners. 7. Fridge it covered. Serving: Cut slices out to eat; put a half cup of hot milk over it to soften it back up and create a really nice porridge. Notes: [1]: This is the binding agent, since there's no eggs - you can't swap it out. [2]: Raspberries and blackberries probably also work. [3]: You can swap the maple syrup and vanilla out for whatever. Cinnamon is good. You do want a sweetener though!
