French Toast Source: https://www.noracooks.com/vegan-french-toast/ Serves: 3-4 Time: 30 mins Work Time: 30 mins Ingredients: * Unsweetened oat milk, 1 cup * Cornstarch, 1/4 cuip * Ground flaxseeds, 1 tsp * Baking powder, 1/2 tsp * Ground cinnamon, 1 tsp * Maple syrup, 2 tsp * Vanilla, 1 tsp * Thick-sliced bread, 6-8 slices * Vegan butter, 2-3 tbsp Steps: 1. Whisk together oat milk, cornstarch, flaxseeds, baking powder, cinnamon, maple syrup, and vanilla. 2. Grease a pan on medium-high heat with the vegan butter. 3. Re-whisk the ingredients to ensure the corn starch doesn't separate. 4. Pour the mix into a wide container (baking pan or even just a big plate). 5. Soak the slices on each side for about 10 seconds, then pan fry for 2-3 minutes per side until golden brown. Remember to add more butter to the pan as needed. Serving: Top with maple syrup, whatever fruit you like, or powdered sugar, and/or butter. Note: You have to use good bread for this - a crusty sourdough that is quite fresh is the best bet, challah would probably work as well but not be vegan, brioche is also maybe a good choice. Do not use pre-sliced bread because it will be too thin. Your slices need to be pretty thick or they will fall apart in the pan.
