Soda Bread Serves: ? (you get 1 loaf) Time: 40min Work Time: 10min Ingredients: * flour, 3.875 cups (white all purpose, or mixed white / wholegrain AP) * baking soda, 1.5 tsp * salt, 0.5 tsp * apple cider vinegar, 2 tbsp * soy milk, 1.875 cups Steps: 1. Prehead oven to 220C / 430F. 2. Lay parchment paper on a bake tray, or line a big loaf pan with parchment paper. 3. In a medium bowl, whisk together soy milk & apple cider vinegar, then let sit for 10 minutes. 4. In a large bowl, whisk together flour, baking soda, and salt. 5. With your hands, make a divot in the center of the dry ingredients. 6. Pour the wet ingredients into the dry ingredients. 7. Mix the wet ingredients in with a spatula until you can't any more, then switch to your hands. Work the dough by hand for a couple of minutes. 8. Once you have a very sticky ball, transfer it onto the bake tray or into the loaf pan. 9. Flatten it out until it's about 1 - 1.5 inches thick. 10. Bake for 20-30min, or until crusty & golden brown. 11. Cool for 1h before cutting. Leftovers: keeps 3-4 days in the fridge.
