Sticky Date Pudding

This is an old recipe from my mom; I've not yet made it myself but I will try some day and fill in the unknown.

Steps

  1. Preheat oven to 160C.
  2. Greate and line the pan.
  3. Make the pudding: cream margarine, sugar, vanilla; beat eggs in one at a time. Fold in flour.
  4. Add the dates: pour boiling water over them and the bicarbonate of soda. Stir that into the pudding.
  5. Pour the mixture into the baking pan, and bake for roughly 40min or until cooked (knife test).
  6. Make the sauce: sugar + margarine + king island / rich cream + vanilla together over heat until boiling, then simmer for 2 minutes.
  7. Take the pudding out of the oven, pour 1/3 of a cup of the sauce over it, put it back in for a further 5 minutes.
  8. Let the pudding cool for 10 minutes.
  9. Slice and serve; add milk to the sauce to thin it if you need to. Serve with pouring cream.
