Sticky Date Pudding
This is an old recipe from my mom; I've not yet made it myself but I will
try some day and fill in the unknown.

Ingredients
Pudding
- margarine, 60g
- brown sugar, firmly packed, 3/4 cup
- vanilla, 1 tsp
- 2 eggs
- self-raising flour, sifted, 1.5 cups
- boiling water, 1.5 cups
- dates, chopped, 1 cup
- bicarbonate of soda, 1 tsp
Sauce
- brown sugar, firmly packed, 1 cup
- margarine, 100g
- king island or rich cream, 1/2 cup
- vanilla, 1/2 tsp
- milk
- pouring cream

- 18cm square sandwich pan or 20cm round cake pan

Steps
- Preheat oven to 160C.
- Greate and line the pan.
- Make the pudding: cream margarine, sugar, vanilla; beat eggs in one at
a time. Fold in flour.
- Add the dates: pour boiling water over them and the bicarbonate of
soda. Stir that into the pudding.
- Pour the mixture into the baking pan, and bake for roughly 40min or
until cooked (knife test).
- Make the sauce: sugar + margarine + king island / rich cream + vanilla
together over heat until boiling, then simmer for 2 minutes.
- Take the pudding out of the oven, pour 1/3 of a cup of the sauce over
it, put it back in for a further 5 minutes.
- Let the pudding cool for 10 minutes.
- Slice and serve; add milk to the sauce to thin it if you need to.
Serve with pouring cream.
